Ingredients:

  • 50 g black rice (or any rice of your choice; I used Riso di Venere)
  • 2 eggs
  • 5-6 cherry tomatoes
  • 50 g grilled chicken (leftover from dinner)
  • 1/4 avocado
  • 1 teaspoon of olive oil
  • Salt and black pepper to taste

Instructions:

  1. Cook the Rice:
    • Cook the rice according to the instructions on the box.
  2. Boil the Eggs:
    • Boil the eggs for 10 minutes from when the water starts to boil.
  3. Prepare the Vegetables and Chicken:
    • Wash the cherry tomatoes and chop them.
    • Chop the avocado.
    • Cut the grilled chicken into small pieces if necessary.
  4. Cool the Rice:
    • Drain the rice under cold water to cool it down.
  5. Combine Ingredients:
    • Mix the rice, boiled eggs, cherry tomatoes, avocado, and grilled chicken together.
    • Season with salt, black pepper, and a teaspoon of olive oil.
  6. Enjoy:
    • Serve and enjoy ❣️
