Ingredients:
- 50 g black rice (or any rice of your choice; I used Riso di Venere)
- 2 eggs
- 5-6 cherry tomatoes
- 50 g grilled chicken (leftover from dinner)
- 1/4 avocado
- 1 teaspoon of olive oil
- Salt and black pepper to taste
Instructions:
- Cook the Rice:
- Cook the rice according to the instructions on the box.
- Boil the Eggs:
- Boil the eggs for 10 minutes from when the water starts to boil.
- Prepare the Vegetables and Chicken:
- Wash the cherry tomatoes and chop them.
- Chop the avocado.
- Cut the grilled chicken into small pieces if necessary.
- Cool the Rice:
- Drain the rice under cold water to cool it down.
- Combine Ingredients:
- Mix the rice, boiled eggs, cherry tomatoes, avocado, and grilled chicken together.
- Season with salt, black pepper, and a teaspoon of olive oil.
