My lighter version of the “English Breakfast”.

Italian sausages, boiled eggs, baked beans and salad”

Ingredients:

  • 1 egg
  • 2 small sausages
  • 2 tablespoons of baked beans in a can
  • 1 slice of dark sourdough bread
  • Mixed salad (e.g., red radicchio, fennel, cherry tomatoes)
  • Salt and pepper to taste
  • Apple cider vinegar or lemon juice to season the salad
  • Olive oil

Instructions:

  1. Cook the Egg:
    • Place the egg in a pan with cold water.
    • When the water starts boiling, cook for 8-10 minutes (less if you prefer it softer).
  2. Cook the Sausages:
    • Place the sausages in a pan with a bit of water.
    • Prick the sausages and cover the pan with a lid.
    • Turn the sausages over and cook until fully done.
  3. Warm the Baked Beans:
    • Warm the baked beans in a microwave-safe cup.
    • Add a pinch of salt to taste.
  4. Prepare the Salad:
    • Wash and chop your veggies (red radicchio, fennel, and cherry tomatoes).
    • Season with salt, drizzle with olive oil, and apple cider vinegar or lemon juice.
  5. Toast the Bread:
    • Toast a slice of dark sourdough bread (or any bread you prefer).
  6. Serve:
    • Place the egg, sausages, baked beans, salad, and toasted bread on a plate.
    • Enjoy!
